Houjicha is probably one of the mildest members of the green tea family. It is a popular tea in both China and Japan. It is harvested from the leaves, twigs, and stems of the tea plant and is slowly roasted. This process yields a cup which produces a lovely amber color, smooth texture, and without the tannic sharpness of traditional green teas, providing a lightly flavored, somewhat-sweet tea. This type of roasted tea is also referred to as HOJICHA, and HOJI CHA.
